With 2.5" from the cat back, will get you the best horsepower with the minimal torque loss.

Anything bigger will hurt your low-end torque; anything smaller will kill your horsepower.

It's a good compromise; a local muffler / speed shop will be able to take care of the cat-back system.

Well sir, I'd first off suggest a high flowing catalytic converter. Next off go with 2.25" or 2.5" stainless tubing (or aluminized if you want to save money), anything larger than 2.5" starts to sound truckish without a large engine to back it up. You may be able to go 2.75" and still sound good, but I think thats an odd size so it may be tough to find a muffler that fits. Second you'll want to retain the use of a resonantor if you don't want your car to sound like its breathing out of a rattling coffee can. No one I've talked to can agree on the best placement for the resonator so you can probably trust GM and put is after the bend that routes the exhuast past the gastank (i.e paralell to the tank). I've heard others say that its best to place it directly downstream of the cat since the exhuast gas has its greatest velocity closer to the engine, but the extreme heat may be detrimental to the life of the resonator, so its about a toss up. As for mufflers take your pick. Some prefer Flowmaster, others Magnaflow. I'm in the magnaflow camp myself having had experience with them.

after the cat you dont want to have more than 6feet i believe of just plain pipe. That will cause the rattling sound. So, im guessint the best place to put the res is in the stock place.
