If I have to change the rear brake lines from the master cylinder to the calipers do I have to bleed all 4 brakes or can I just disconnect the line put my finger on the master cylinder hole then take the new brake line put it in and then bleed the system at the back only?

I would go ahead and bleed all 4 lines. It is recommended to replace your brake fluid about 2 years or so to minimize rust formation and moisture. Moisture lowers the boiling point of the brake fluid and cause rust formation.
